‘12% alcohol. This is a beautiful rarity: it’s 100% Fromenteau (Pinot Gris) with zero dosage. Bottled in 2019 this is half 2017 and half 2018, with some aged in barrel. Organically farmed. The name is a spoonerism: they weren’t allowed to use Fromenteau, so the made-up name actually means ‘It’s so good I don’t have enough of it,’ while alluding to its varietal origins. This is from a very warm south-facing plot, and the vines were planted in 2010 by Michel. It’s surprisingly low in acidity, with a pH of 3.55 and a TA of 6 g/litre, but there is some freshness from the phenolics. Half of the grapes were used to make a still wine (Coteaux Champenois). Yellow gold in colour. Toasty, spicy, honeyed nose. The palate is rich and has a spicy frame with sweet pears, a touch of cherry and some baked apple. ‘Produced entirely with organically farmed Fromenteau grapes sourced from the Truchots parcel near Urville in the sector of Côte des Bars, using wine from two vintages – 2017 and 2018 – in equal parts. Some ageing in oak casks before being bottled under cork in April 2019. Deep yellow hue. Delicate notes of fresh fruit including pear but also exotic ones of guava and gentle spices including vanilla. On the palate, it is juicy and fleshy with quite a round, soft, even waxy mouthfeel along with a pronounced taste of spices. There is also underlying structure and racy acidity that give poise and balance, especially on the long, elegant, and refreshing finish, with an added touch of complexity provided by a welcome touch of beguiling bitterness for this outstanding Champagne made with the Fromanteau grape. Producer information The house of Drappier was established during Napoleonic times, though its Urville cellars date back to the 12th century. Considered to be one of Champagne's greatest boutique producers, Drappier's vintage and prestige cuvées were famously collected by Charles de Gaulle - the French general and statesman who led the Free French Forces during the Second World War. Drappier's winemaking philosophy is one of minimum intervention and, since 2008, the house has been producing Champagne with very little addition of sugar and sulphur dioxide. The wines are typically fruity, lively and exuberant with a strong Pinot Noir influence.
