The 2019 sits somewhere between the epic 2017 and more approachable 2018. It immediately offers classic Paul Sauer dark cherry and crème de cassis, with inviting aromas of oak spice and bouquet garni freshness. Beautifully balanced, it has a bright, lively acidity along with savoury complexity and supple tannins. There is a lot of depth to this elegant release. As always, the wine is seamless and a triumph of winemaking skill.

Kanonkop, Paul Sauer 2019

'The 2019 Paul Sauer is a blend of 75% Cabernet Sauvignon, 14% Cabernet Franc and 11% Merlot. It's produced from vines averaging 30 years of age, grown on dryland vineyards of Decomposed Granite and Hutton and Clovelly soils. Traditionally vinified in open top fermenters and with regular punch downs, the wine then spends 24 months in 100% new 225-litre French Nevers Oak. This is a classic and elegant Paul Sauer with dark cherry, cassis and youthful, attractive oak spice of nutmeg, cinnamon, and cedar. The wine is fleshed out with notes of graphite and tilled earth, and lifted by fresh herbaceous notes. The palate is generous, with lively acidity and subtle, layered complexity. Like previous releases, the wine's refined and detailed tannins possess an effortlessness, yet it has the weightless intensity to mature for decades to come.
