'The wine shows a lovely creamy explosive mousse with a fine bubble, lovely bright tangy acids and a complex bouquet of green apple skins, grilled almonds, cardamom and spicy white citrus. The palate is full and expansive, tangy and fresh with sweet and sour acids, layers of citrus, yellow grapefruit, lemon cream biscuits, crunchy green apples and a long, dry, saline picante finish. Very impressive depth of fruit but also beautiful complexity, electric vibrancy and a stony cool climate minerality on the finish. 'The nose presents with Granny Smith apples, chamomile, oats, pistachio, with a hint of nectarines and sunflower seeds. Slight lemon zest pithiness, opening to a naturally fresh palate. Lively and taut with notes of aniseed and quince. The delicate, fine bead provides palate lift with a lasting mineral-saline mousse. Flavours of salty macadamia and hay round off the finish.
