‘Grapes from Stellenbosch. Fermented and matured for seven months in second-fill barrels, half inoculated and the other left to undergo spontaneous fermentation. Honeysuckle, yellow apple, peach and some leesy complexity on the nose while the palate is nicely contained and rather less blowsy than wines from this variety can often be – good fruit concentration and punchy acidity, the finish savoury. ‘The Foundry Viognier 2021 is pale in colour, clear and bright with a pronounced greenish hue. The nose has restrained aromatics of citrus, jasmine and sea breeze, but remains elegant and perfumed. These flavours follow through onto the palate which is crisp, linear and refined with crushed fresh fruit, succulent juiciness and finishes with a mineral steeliness which makes this wine ideal with food. There is a line of natural acidity running through the wine maintaining freshness and focus.’ – The Foundry

| Producer information | Chris Williams, winemaker, along with friend and co-owner, James Reid, started The Foundry in 2001. They started off using Joostenburg winery for their first vintage and have come a long way since – gaining numerous accolades and awards for their wines. Their wines are site specific, terroir defined wines, with the aim of producing wines that both Chris and James enjoy drinking. Chris is also the cellarmaster at Meerlust where he also vinifies The Foundry wines. |
