'The nose is shy and subtle, though notions of red apple, peppery rye crumb, stone and lemon emerge with more air. Tightly coiled, the palate suggests spicy riches with its insinuations of white pepper and tangerine peel. A lovely interplay of Pinot richness and Chardonnay slinkiness, showing depth, svelteness and elegance. It justs needs air to breathe. Gorgeous. 'The latest release of Taittinger's NV Brut Prélude Grands Crus is showing nicely, offering up aromas of pear, crisp stone fruit, warm biscuits and marzipan. Medium to full-bodied, fleshy and precise, with tangy acids and fine depth at the core, this is still a little reserved after what I suspect is quite a recent disgorgement, and it will merit a little patience. 'Disgorged January 2018. Based on 2014. Dosage 9 g/l. 50% Côte des Blancs Chardonnay and Mailly, 50% Verzenay and Ambonnay Pinot Noir. New format to be launched later in 2019. This really has the creamy signature of Taittinger. Quite rich but precise and with some finesse too. Orange peel. 'Only the first pressings are used, resulting in a perfect balance between the vibrant minerality of the Chardonnay and the strength and structure of the Pinot Noir. It matures for 5 years in the cellars, and retains a distinct freshness, combining sophistication and complexity. Its minerality opens up the nose, before quickly becoming botanical and blossoming out into a fragrance of elderflower mixed with spicy notes of cinnamon. Producer information Taittinger dates back to 1734 when the first owner worked with Benedictine monks to learn how to produce sparkling wine. It was only later, in 1932, that Pierre Taittinger acquired the estate and relaunched it under his family name. Taittinger is one of Champagne's largest producers and is part of the Union des Maisons de Champagne, a syndicate of Champagne houses that includes the likes of Bollinger, Laurent Perrier, Moët & Chandon, and Louis Roederer. Taittinger owns four kilometers of chalk caves (originally dug out by the Romans) and is only one of five Champagne houses who uses them for cellaring.
