On tasting the Paul Sauer 2021, we were impressed with how well the new oak had integrated – another mark of a great vintage. The wine shows concentrated dark cherry and bay leaf notes, super-fine tannins, and a layered, detailed palate with incredible balance and elegance, all with just 13.1% alcohol. This will mature for decades to come and is a must for every fine wine collector.
In what could be Abrie Beeslaar’s last presentation of the new vintage, he was in a philosophical mood, discussing the magic of this special single vineyard. The site is cooler and low-lying, planted on shallow soils, and this slows down the ripening process – creating fine-grained tannins and concentrated fruit.
