This 100% Cabernet Sauvignon is a miniscule 600-bottle production from the Helderberg, Stellenbosch. The wine is 15% whole-cluster fermented before maturation for 11 months in older 225-litre barrels. Lithe, ethereal, and finessed, it’s Cabernet Franc like in its expression, with bright cranberry, raspberry and cassis followed by a savoury, herbaceous twist.
