About Crystallum:
Crystallum, based in Walker Bay, South Africa, is a family-run and privately-owned winery. Brothers Andrew and Peter-Allan are the third generation of Finlayson winemakers and sons of the man who pioneered Pinot Noir winemaking in the Hemel-en-Aarde region. Both work on the winery, however this was not the paths they took when studying.

The Mababel Pinot Noir is a single vineyard wine from Overberg. It is produced by Crystallum wines - a small, family run and privately owned winery based in the Walker Bay region of South Africa.

Tasting notes:
'Elandskloof is best known as a stellar site for Chardonnay, but it’s also very well suited to Pinot Noir. The altitude of the parcel (700 metres) shows in the freshness, zip and focus of this wine, with pepper spice fro 40% whole bunches and subtle redcurrant and pomegranate fruit. 2019-27.' – Tim Atkin MW, SA Special Report 2018, 94/100

'Grapes from Elandskloof. 10% whole bunch fermentation. A properly complex nose showing red and black fruit, some musk, earth, spice as well as just a hint of reduction. The palate, meanwhile, is tightly wound with pure fruit and fine tannins, the finish long and savoury – intricate and refined.' – Christian Eedes, Winemag.co.za, 92/100

Vinification:
Mabalel 2017 was fermented using only native yeasts and sees a much lower portion of the fruit kept as whole clusters (10%) than the other Crystallum Cuvees. The total time in tank was 29 days with a 14 day post fermentation maceration. The wine was then transferred to barrel (20% new) where it remained for 11 months before bottling.
