'Grapes from Polkadraai Hills. Whereas the previous two vintages involved full whole-bunch fermentation, this saw 30% of the fruit destemmed and this has added some extra padding to the palate, the wine that much less esoteric as a result. Violets and cassis on the nose, lovely fruit delineation combined with a particular vitality – alcohol is 12.48%.' – Christian Eedes, Winemag.co.za, 92/100

'Going against what is considered 'standard operating procedure', we fermented the grapes with a good percentage of whole bunch (75%) with the remaining destemmed on top. We love the tannin structure and aromatics the whole bunches can give to a wine and feel it works well with Cabernet. We pressed the grapes a little earlier that complete dryness to make sure the tannins didn't get too aggressive and finished fermentation in tank. The wine was then matured in neutral 300L barrels for 12 months before bottling.' – Jeanine and Mick Craven, Winemakers

Producer information As Stellenbosch revolutionaries, Mick and Jeanine Craven’s constant experimentation and their willingness to fight for great little parcels, have made them the poster couple for bringing whole-bunch, skin contact, early picking and all things geeky to Stellenbosch. These Young Gunners are the Stellenbosch champions of light, yet complex wines. Producing single-vineyard wines only, these 2 winemakers know their vineyards like the back of their hands. ‘Craven is one of the most interesting wine projects in South Africa. It's part of the rediscovery of the best vineyard sites in Stellenbosch that's currently underway, with a whole group of young guns looking to find the gems and make interesting wines from them,’ says Jamie Goode.
