'The 2018 White Blend Chaos is 100% barrel-fermented in a combination of 228- and 500-liter French barrels. Left on the lees for eight months prior to bottling, it has an intriguing bouquet of passion fruit, dried honey, linseed oil and light walnut aromas. The palate is very saline on the entry, then segues into quite a concentrated, tensile midpalate that just falls a little short on the finish. But otherwise this should drink well for several years. 'The Chaos White 2018 is made from 68% Sauvignon Blanc and 32% Sémillon and starts off with sweet pear, apricot and elderflower and dry hay around the edges. This develops into fennel with a green tea and ginger undertone. The pallet has a pithy edge, yet coated with an oily, multi-layered and textured mouthfeel. Don’t be too rushed in finishing this bottle. Once opened, the flavours will continue to change over time.' – Winemaker

Producer information Elgin Ridge, owned by Brian and Marion Smith, is a certified organic and biodynamic farm located in the Elgin valley. It is currently the only certified organic wine producer in Elgin, and one of just two certified biodynamic wine producers in South Africa. The wine estate sits at 282 metres above sea level and experiences cool climate conditions which are ideal for the vineyards and wine production. The cool breezes also ensure the grapes produce balanced wines with good fruit, fine acidity and minerality.
