Winemakers Notes

Our winemaking philosophy and farming practices do not allow us to make a reductive New World style of Sauvignon blanc – nor do we want to! Grapes are harvested early in the morning when temperatures are still low. Grapes are kept in a cold room overnight to be even further cooled. Whole-bunch pressing is followed the next morning to limit the amount of soluble solids in the juice, since we do not use settling enzymes. Fermentation happens spontaneously in very old French barrels. This allows us to control the natural fermentations better and increases the lees / wine ratio after ferment. After 6 month the we make up the ‘assemble’ prior to bottling.

'Made in a slightly drier style than the 2015, this naturally fermented Sauvignon is like a cross between a Pouilly-Fumé and a Pessac-Léognan, with leesy weight, good texture, subtle oak and a tangy, piercing, nettle and gunflint finish.' Tim Atkin Report 2017, 94/100
