3 days skin ferment, at 18 balling, pressed to old French barrel with lees, to finish alcoholic and mlf ferment. 10 months maturation, No fining.

Tasting notes:
'Grapes sourced from Darling, Durbanville and Wellington. Fermented for three days on the skins before 10 months maturation in old oak. Deep in colour, the nose shows naartjie, yellow peach and apple plus dried flowers and spice, honey and a little nuttiness. Full and broad on the palate with tangy acidity and a pithy finish'. – Christian Eedes, 93/100

'Craig Sheard makes some of the most intriguing wines in South Africa, surrounding his barrels with crystals to “harness cosmic energy”.
