Delaire Graff, Cabernet Sauvignon Reserve 2015

Notes

'Planted in 2000 and sourced from vineyards between 320 and 340 metres, this pure Cabernet Sauvignon sees 80% new oak and is built to mature further in bottle. If you can’t afford the Laurence Graff Reserve, this is around a fifth of the price and gives you a glimpse of the summit occupied by Delaire Graff’s icon wine. Elegant, stylish, polished Cabernet with fine-grained tannins and pure pastille flavours. 2018-22.‘ – Tim Atkin MW, SA Special Report 2016, 93/100

Vineyard blocks:
The grapes were handpicked in early hours of the morning from Delaire Graff Estate’s mountain vineyards. All grapes were extensively hand sorted to ensure only the best quality is used for wine making.

Vintage conditions:
A wet 2013 winter and unpredictable weather conditions during harvest presented a challenging vintage. However, the subsequent quality is fantastic and resulted in excellent extraction along with full, ripe flavours.

Production:
The wine was produced with meticulous care – hand sorting, whole berry fermentation, gentle extraction of fruit, basket pressed, matured in 80% new French oak barrels and a rigorous selection to decide on only the best.

Analysis:
TS: 2.5 g/1 pH: 3.58 TA: 5.5 g/1 Alc: 14.5%
