'We seek to produce classic wines in a new world context that reflect a traditional, age-old way of working coupled with the new world vineyards which we source our fruit from. The only varieties that we work with are Pinot Noir and Chardonnay, with multi vineyard blends and single vineyard wines making up the collection.' Andrew and Peter-Allan, the team behind Crystallum.

Peter and Max are the first names of the growers who supplied the fruit for the first vintage of this wine. The fruit sources have subsequently changed over the years but the name is now entrenched for this multi vineyard pinot noir blend. It is sourced from two vineyards in the Hemel en Aarde area of Walker Bay.

'Vineyards recently planted to better clonal material are now maturing and we are seeing Pinot increase in quality, especially in terms of complexity. The 2017 Peter Max is a perfect case in point. There is no doubt that this is a step up on 2016, the aromas of earth, savoury notes and fruit are layered, knit and complex. It follows to a sumptuous palate with good acidity, fine grained tannins and an all-round sense of finesse. This is a great wine at this price.' James Pietersen, tasted January 2018. Viticulture:
The 2017 Peter Max Pinot Noir is a crafted from fruit sourced from four vineyards, three in the Hemel en Aarde area of Walker Bay and one on a high altitude, inland site. The vineyards form the perfect building blocks to reflect this oustanding vintage.

Vinification:
The 2017 Peter Max is naturally fermented with 60% of the fruit de-stemmed and the remainder left as whole clusters. Extraction is kept to a minimum during active fermentation with a total time of 4 weeks on the skins.

Tasting notes:
'Grapes from various sites. 40% whole-bunch fermentation. The nose shows some rose petal perfume plus fresh herbs before red cherry. Plenty of juicy, pure fruit and very fine, soft tannins – impossible not to like.' – Christian Eedes, Winemag.co.za, 90/100
