'One of a number of outstanding Chardonnays produced on the Hemel en Aarde Ridge, albeit from youngish vines, this foudre-aged white is a revelation in 2016. Clay Shales Chardonnay is a single vineyard wine crafted from fruit grown just outside of the Hemel en Aarde Ridge ward. The site is over 300 metres high in altitude. The region is characterised by a moderate, maritime climate that contributes to delay ripening. Soils are of a clay shale composition allowing for optimum fruit development while naturally restricting vigour and keeping crop levels very low.

Tasting notes:
'The 2016 Clay Shales Chardonnay marks a change since it aged in 2,600-liter Stockinger foudres as Peter-Allan moves towards larger vessels. It has a very composed bouquet with a subtle resinous, nutmeg oil and walnut notes that become more prominent with time in the glass. The palate is well balanced with light lemon sorbet notes, a keen thread of acidity and a precise and sustained finish. Give this another year in bottle, because it is keeping its cards to itself at the moment.' – Neal Martin 91/100

Production:
Whole bunch pressed, no enzyme, SO2 or commercial yeasts were added at pressing. After over-night rough settling the juice was sent to barrel. made using traditional techniques with Ffermentation and ageing tookaking place over 10 months, in a 2600L Foudre.
